I wrestled with the thought of whether or not to include my secret ingredient for my often–sought–after Peanut Butter Cookies. This recipe is the result of trying numerous recipes which never quite fit my expectations. I decided to include my secret ingredient; I'm just not going to say which ingredient it is.

Preparation Time: 2 Hours 30 Minutes    Serving Size: 7

  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1/8 teaspoon cinnamon
  • 1/4 cup shortening
  • 1/4 cup (4 tablespoons) unsalted butter, softened
  • 1 egg
  • 1 1/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Cream sugars, peanut butter, cinnamon, shortening and butter in large bowl. Add egg and blend. Mix dry ingredients in a separate bowl before adding to the creamed mixture. Cover and refrigerate 2 hours or until firm. Heat oven to 375°. Shape dough into 1 1/4 inch balls. Place 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with greased fork dipped in sugar. Bake 9 to 10 minutes or until lightly brown. Cool 5 minutes; remove from cookie sheet.
