Sweet Potato Pie
Sweet potatoes
are eaten all over the South in many different ways. This pie is close to Pumpkin Pie but
still retains in own unique taste. I like to bake my potatoes until just tender for my
pies.
Preparation Time: 2 Hours Serving Size: 8
- 3 medium sweet potatoes (about 2 pounds)
- 1/3 cup butter
- 1/2 cup sugar
- 2 eggs beaten
- 3/4 cup evaporated milk

- 1 teaspoon vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1 deep dish pie crust, unbaked

Heat oven to 375°. Bake sweet potatoes for 45 minutes,
or until they are soft. Set aside to cool. When cooled, peel skin away from potato and
place the meat in a bowl. Use a hand mixer to mash the potatoes. In another lager bowl,
cream the butter and sugar. Add eggs and stir. Add sweet potatoes and mix well. Stir in
milk, vanilla, spice and salt, making sure all ingredients are thoroughly mixed. Pour into
pie shell and bake 40 minutes. |
