This marinated chicken is suitable for grilling or broiling. Tarragon, the star of Béarnaise Sauce, has such an interesting flavor and lends itself well to the juices.

Prep Time: 10 minutes plus marinating time    Serving Size: 6

  • 4 boneless chicken breast
  • 1/2 cup lemon juice
  • 1/2 cup orange juice
  • 6 cloves garlic, finely chopped
  • 1 teaspoon ground ginger
  • 1 teaspoon dried tarragon
  • salt and pepper to taste

Combine all marinade ingredients in a glass dish. Add chicken and toss to coat chicken evenly with marinade. Cover and refrigerate for 2 hours. Grill or broil as desired. Serve with brown and wild rice and steamed vegetables.
