Greek Pasta Salad
Greek food is
known for its fresh flavorful taste. This light pasta salad is no
exception.
Preparation Time: 45 Minutes Serving Size: 6
- 3/4 pound tomatoes, chopped
- 1 large red bell pepper, seeded and chopped
- 1/4 pound feta cheese, crumbled
- 1/2 cup olive oil
- 1/2 cup black olives, pitted & chopped
- 1/4 cup fresh lemon juice

- 2 tablespoons dry white wine
- 1 tablespoon dried thyme, crushed
- 1/2 teaspoon dried oregano, crushed
- 6 green onions, chopped
- 3/4 pound linguini fresh
- 3/4 pound shrimp steamed

Mix first 10 ingredients in large bowl. Add linguini and
shrimp and toss to blend. Season salad to taste with salt and pepper. Can be prepared 30
minutes ahead. Let stand at room temperature. |
