This marinade is outstanding! Be sure to use a real charcoal grill for the best flavor.

Preparation Time: 10 minutes; 2-hour marinade time

  • 1/2 cup olive oil
  • Juice of 3 lemons
  • 2 cloves garlic, crushed
  • 1/3 cup white wine vinegar
  • 1/2 teaspoon salt
  • 1 heaping tablespoon chopped yellow onion
  • 1 heaping teaspoon dried oregano
  • 1/2 teaspoon coarsely ground black pepper
  • 1/2 teaspoon dry mustard

In a jar with a tight lid, combine ingredients and shake very well to combine. Pour over chicken pieces in a bowl with a tight lid and marinade at room temperature for 2 hours, turning twice. Grill until done, basting with left-over marinade while grilling. Discard any marinade not used during grilling.
