This family
favorite goes by many other names. Some call them Mexican Wedding Cakes, for instance. No
matter what you call them, these delights will melt in your mouth.
Preparation Time: 30 minutes Serving Size: 10
- 1 cup (8 tablespoons) unsalted butter, softened
- 1/2 cup confectioner's sugar
- 2 teaspoons vanilla extract

- 2 cups all purpose flour
- 1/4 teaspoons salt
- 1 cup walnuts, chopped fine

Heat oven to 400°. Cream butter, sugar and vanilla. Work
in flour, salt and nuts until dough holds together. Shape dough into 1 inch balls.
Place on ungreased cookie sheet. Bake 10 to 12 minutes or until set but not brown. While
warm, roll in confectioners sugar. Cool. Roll in sugar again. |
