"To make a good salad is to be a brilliant diplomatist-the problem is entirely the same in both cases. To know exactly how much oil one must put with one's vinegar."

This recipe for Blue Cheese Dressing is one of the best I've ever tasted. It goes well on Chef's Salads, Chicken Wings and as a dip for vegetables. Simply adjust the amount of milk to get the consistency desired. This dressing changes with time and needs to sit as long as possible before using, overnight if time permits.

Preparation Time: 10 minutes plus sit time    Serving Size: 6

  • 1 cup mayonnaise (Duke's if you can find it)
  • 4 ounces blue cheese, crumbled
  • 4 ounces sour cream
  • 1 large or 2 small garlic cloves, minced
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon Salt
  • 1/8 teaspoon black pepper
  • dash hot pepper sauce
  • 1 to 2 tablespoons milk

Combine all ingredients except milk in a bowl that has a lid. Mix well. Thin with milk to desired consistency. Cover and refrigerate as long as possible before use, preferable over night.
