"To make a good salad is to be a brilliant diplomatist-the problem is entirely the same in both cases. To know exactly how much oil one must put with one's vinegar."

A very basic tartar sauce that is based on the dressing in my Creamy Cole Slaw. As with most sauces, adjust ingredient amounts to taste. Make early enough to allow the flavors to marry.

Preparation Time: 10 minutes plus sit time     Serving Size: 1 cup

  • 1/2 cup mayonnaise, Duke's if you can find it
  • 1 tablespoon apple cider vinegar
  • 2 dashes of Worcestershire sauce
  • 1 dash of Texas Pete hot sauce, or to taste
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 3/4 teaspoon finely grated onion and juice
  • 1/3 to 1/2 cup finely minced hamburger dill chips

Whisk together the mayonnaise, vinegar, Worcestershire sauce, Texas Pete hot sauce and salt and pepper until well blended. Use the small-hole side of a box grater to grate the onion, being careful to collect the juice. Add to the mix. Mince finely the hamburger dill chips and add to the mix. Place in a covered bowl and place in the refrigerator for at least 30 minutes or as long as you can before serving. Stays fresh for up to three days under refrigeration.
