Nothing's as good as warm peach cobbler served with homemade vanilla ice cream!

Prep Time: 1 1/2 hours    Serving Size: 6

  • 3 cups peaches, sliced
  • 1 1/4 cup sugar, divided into 3/4 and 1/2 cups
  • 3/4 cup all purpose flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 8 tablespoons unsalted butter

Heat oven to 350°. If using fresh peaches, blanch them in boiling water for 30 seconds and then shock in ice water to allow for easy removal of the skin. Slice and place in a bowl with 3/4 cup of sugar. If using frozen sliced peaches, remove from the freezer and thaw. Place in a bowl with 3/4 cup of sugar. Put the stick of butter in a deep 2 quart casserole and put in the oven until melted. Remove and set aside. Combine 1/2 cup sugar, flour, baking powder and salt in a medium bowl. Stir in milk and vanilla extract to combine into a batter. Pour the batter over the melted butter. Pour peach and sugar mixture on top of the batter. Bake for 1 hour. Cobbler will rise to the top as it cooks.
